Easter is the perfect excuse to get a little extra creative in the kitchen. Nothing says springtime celebration quite like a batch of festive cupcakes. Whether you’re baking with kids, prepping for a holiday gathering, or just looking for a reason to play with pastel frosting and chocolate eggs, these Easter cupcakes are as fun to make as they are to eat. However, with a few simple decorating tricks, you can transform a classic cupcake into an adorable springtime treat. It will steal the show at any Easter table.

Equipment
- disposable piping bag with a star tip
Ingredients
Cupcake Ingredients:
- 1 C flour
- ¾ tsp baking soda
- ½ tsp sea salt
- ¼ tsp baking powder
- ⅓ C cocoa
- ½ C unsalted sweet cream butter softened
- ¾ C granulated sugar
- ½ T pure vanilla
- 1 egg
- 1 C whole milk
Frosting Ingredients:
- 1 C unsalted butter soft
- 4 C powder sugar
- 4 TBSP heavy whipping cream
- Grass Green gel food coloring
- 1 pkg yellow duck marshmellow
- 1 bag Easter malted eggs
- Wilton Icing Decorations small flowers
Instructions
Cupcake Directions:
- Preheat oven to 350 degrees.
- Line cupcake pan with paper liners
- Using a medium bowl mix together the dry ingredients: flour, cocoa, baking soda, and powder. Set aside.
- In another mixing bowl, butter and sugar until creamed for 2 minutes
- Add in the vanilla and egg until well mixed
- On low, gradually mix in the dry ingredients with the wet and mix until combined.
- Add in milk and mix
- Evenly distribute the batter into the cupcake liners
- Bake at 350 degrees for 21-24 minutes
- Allow the cupcakes to cool for about 10 minutes while still in the cupcake pan
- Transfer the cupcakes to a wire rack to cool completely
Frosting Directions:
- Cream the butter and powder sugar until it looks light and creamy.
- If it doesn't cream, add several drops of the heavy whipping cream until it creams.
- Test whether the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon, it is ready; if not, then add more powdered sugar, 1/2 C at a time, and mix well.
- Add several drops of the grass green gel food coloring. Mix well to incorporate the color thorough out the frosting.
- If ready, scoop the frosting into a pastry bag with a large star tip.
- Twist the open end of the pastry bag to push the frosting to the star tip.
- Start by frosting on the outside edge of the cupcake working to the center of the cupcake.
- Sit the yellow duckie in the center of the frosted cupcake.
- Place the malted Easter eggs, in a set of two or three together on one side of the cupcake.
- Position several candy flowers on the other side of the frosted cupcake.
