Calling all my tofu fans! Firm and extra firm tofu is packed in water to keep it fresh. However, if you don't remove the water, your tofu can be pretty plain. By removing this water, the tofu can absorb the flavors of spices, marinade, or other foods. Tofu is often called a wonder (aff) food because it has no natural flavor or taste and acts as a canvas for flavors. Proper pressing also makes the texture of tofu more chewy and firmer.
