  • Preheat oven to 350 degrees. Line the cupcake pan with paper liners.
  • Whisk flour, sugar, baking soda, and baking powder together in a mixing bowl.
  • In another bowl, mix the wet ingredients together on medium speed until mixed.
  • Add this bowl to the dry ingredients and mix on medium speed until just blended.
  • Fill cupcake liners a little more than 3/4's way.
  • Bake at 350 degrees for 20-25 minutes.
  • Allow to cool in the cupcake pan for 10 minutes.
  • Remove to cooling rack to finish cooling about 30 minutes.

Frosting Directions

  • Beat butter, vanilla, and powdered sugar until light and creamy. If it doesn't cream, add several drops of the heavy whipping cream until it does.
  • Take a spoonful of frosting and turn the spoon upside down. If the frosting stays on the spoon it is ready.
  • If the frosting isn't ready, add more powder sugar 1/2 C at a time and mix well until it is.

  • Now scoop the frosting into a piping bag with a large tip.

  • Twist the open end of the piping bag to push the frosting to the tip. Frost by working on the outside edge of the cupcake working to the center of the cupcake.
