Unicorn Cheesecakes
Equipment
- 1 package Wilton edible unicorn horns and ears
Ingredients
- 1 package oreos creme filling removed and finely crushed
- 3 tbsp sugar
- ½ C butter melted
- 2 – 8 oz cream cheese softened
- ? c sugar
- ¼ c sour cream
- 2 tsp pure vanilla extract
- 2 large eggs
- 1 C halloween sprinkles
- gel food coloring Orange and black
- ¾ C Halloween sprinkles
- Fresh whipped cream
Instructions
- Preheat oven to 325 degrees and line the cupcake/muffin pan with the cupcake liners
- Using a medium bowl, whisk the oreo cookies, sugar and melted butter until a wet sandlike mixture forms
- Scoop 1 1?2 tbsp of chocolate cookie crust into the cupcake liners and press into a even bottom using a flat bottom glass or measuring cup
- Bake the crust in the preheated oven for 5 minutes
- Remove and allow to cool completely
- Preheat the oven to 350 degrees
- Using a large bowl, beat the cream cheese and sugar until combined and smooth
- Beat in the sour cream and vanilla until combined and smooth
- Add in one egg at a time and beat until combined
- Divide the batter into two bowls, mix in a few drops of orange gel food coloring into one bowl and a few drops of black gel food coloring into the second bowl
- Spoon 1 tablespoon of orange cheesecake batter and gently spread evenly
- Spoon 1 Tablespoon or yellow cheesecake batter on top of the orange
- Spoon 1 tablespoon of orange cheesecake batter on top
- Place into the oven and bake for 25-35 minutes or until the center is set
- Remove and allow to cool on the counter until room temp before moving to the fridge overnight
- While the cheesecake is setting, use the green edible marker and color the unicorn ears green
- Top with fresh whipped cream, the unicorn icing decorations and more sprinkles
